Chili Base Preparation

Cook the Beef
In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Combine Ingredients
Add the canned diced tomatoes, kidney beans, chili powder, ground cumin, salt, black pepper, and water to the pot. Stir well to combine.

Simmer
Bring the mixture to a simmer, then reduce the heat to low and cook for about 20 minutes, stirring occasionally.
Macaroni Preparation

Cook the Macaroni
In a separate pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes.

Combine with Chili
Once the macaroni is cooked, drain and add it to the chili base. Stir well to combine.

Add Cheese
Mix in the shredded cheddar cheese until melted and well incorporated into the chili mac.
Serving and Toppings

Spoon the chili mac into bowls. Top with a dollop of sour cream, chopped green onions, and jalapenos as desired.
