Prepare the Chicken
Shred the smoked chicken thighs into bite-sized pieces and set aside.

Chop the Vegetables
Slice the bell peppers and onion into thin strips.
Cooking

Sauté the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers and onion, and sauté for about 5-7 minutes until they are tender.

Combine Chicken and Vegetables
Add the shredded smoked chicken to the skillet with the sautéed vegetables. Mix thoroughly and cook for an additional 3-5 minutes until heated through.

Prepare the Hoagie Rolls
Lightly toast the hoagie rolls in a toaster or under the broiler until golden brown.

Assemble the Sandwich
Spread 1 tablespoon of chipotle mayo on the inside of each toasted hoagie roll. Fill each roll with the chicken and vegetable mixture, then top with shredded pepper jack cheese.
