Preparation

    Prepare the Meat

    Trim excess fat from the beef brisket or pork belly and cut into 1-inch cubes.

    Make the Rub

    In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Coat the meat cubes liberally with the rub.

    Add Liquid Smoke

    Drizzle the liquid smoke over the seasoned meat and toss to coat evenly.

Smoking

    Set Up Smoker

    Preheat your smoker to 225°F (107°C) using your choice of wood chips (hickory or oak work well).

    Smoke the Meat

    Place the seasoned meat cubes in the smoker and smoke for about 3-4 hours, or until they reach an internal temperature of 190°F (88°C).

Finishing Touches

    Add BBQ Sauce

    Once the meat is done smoking, remove it from the smoker and toss the cubes in BBQ sauce.

    Caramelize the Meat

    Return the sauced meat to the smoker for an additional 30 minutes to caramelize the BBQ sauce.

    Assemble the Sliders

    Place a generous portion of burnt ends on each slider bun and top with coleslaw, pickles, or jalapenos as desired.
