Preparing the Potatoes

Baking the Potatoes
Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water to remove dirt. Pat them dry with a towel. Prick each potato several times with a fork to allow steam to escape. Rub each potato with butter, then sprinkle with salt and black pepper. Wrap each potato in aluminum foil and place them on a baking sheet.

Once the potatoes are cool enough to handle, slice each potato lengthwise down the middle, being careful not to cut all the way through. Gently squeeze the ends to open up the potato and fluff the insides with a fork. Add a tablespoon of butter into each potato and mix it in.

Adding Toppings
Top each potato with a generous amount of shredded cheddar cheese, followed by the warmed smoked meat. Drizzle BBQ sauce over the top, then add a dollop of sour cream. Finally, sprinkle chopped chives or green onions for garnish.
