Prepare the Dough
In a large mixing bowl, combine bread flour, whole wheat flour, rye flour, spelt flour, oat flour, barley flour, and salt. Mix thoroughly.

Incorporate Sourdough Starter
Add the active sourdough starter and warm water to the dry ingredients. Mix until a rough dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10-15 minutes until the dough is smooth and elastic.

First Rise
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 4-6 hours or until doubled in size.

Shape the Dough
Once risen, gently deflate the dough and shape it into a loaf. Place it into a greased loaf pan or onto a baking sheet.

Second Rise
Cover the shaped dough again and let it rise for another 2-3 hours, or until it has puffed up.

Preheat the Oven
Preheat your oven to 450°F (232°C) with a baking stone (if using) for at least 30 minutes.

Bake the Bread
Bake the bread for 30-35 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.

Cool the Bread
Remove the bread from the oven and let it cool on a wire rack before slicing.

Soften Butter
Take the unsalted butter out of the refrigerator and let it soften at room temperature for about 30 minutes.

Whip the Butter
Using a hand mixer or stand mixer, beat the softened butter until it becomes light and fluffy.

Add Flavors
Add the sea salt, honey, and chopped fresh chives (if using) to the whipped butter. Mix until well combined.

Transfer the whipped butter to a serving dish and refrigerate until ready to serve alongside the warm sourdough bread.
