    Prepare the Ingredients

    Clean the wild mushrooms by brushing off any dirt with a damp cloth. If they are large, slice them into bite-sized pieces. Drain and rinse the canned white beans. Chop the onion and mince the garlic.

Cooking

    Sauté Pancetta and Onions

    In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook for about 5 minutes, until it starts to become crispy. Add the chopped onion and continue to sauté for another 3-4 minutes until the onion is translucent.

    Cook the Mushrooms

    Add the cleaned wild mushrooms to the skillet and cook for about 6-8 minutes, stirring occasionally, until the mushrooms are golden brown and have released their moisture.

    Add Garlic and Beans

    Stir in the minced garlic and cook for an additional minute until fragrant. Then, add the drained white beans, chopped thyme, salt, and black pepper. Stir well to combine.

    Simmer and Serve

    Reduce the heat to low and let the mixture simmer for about 5-7 minutes, allowing the flavors to meld together. Adjust seasoning to taste. Serve warm, garnished with additional thyme if desired.
