Prepare the Ingredients
Rinse the boneless rainbow trout fillets under cold water and pat them dry with paper towels. Season both sides of the trout with salt and black pepper. Slice the lemon into thin wedges and set aside. Chop the fresh parsley finely.

Sauté the Trout
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, carefully place the seasoned trout fillets in the skillet. Sauté for about 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the trout from the skillet and set aside on a plate.

Create the Sauce
In the same skillet, add the caper berries and sauté for about 1 minute. Then, pour in the dry white wine and bring to a simmer. Add the lemon wedges to the skillet and let the sauce reduce for about 3-4 minutes, until it thickens slightly.

Combine and Serve
Return the sautéed trout to the skillet, spooning the sauce over the fish. Cook for an additional 1-2 minutes until the trout is heated through. Garnish with chopped fresh parsley before serving.
