Sauté the Aromatics
In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

Add Tomatoes and Olives
Add the halved plum tomatoes and sliced black olives to the skillet. Season with salt and black pepper. Cook for about 5 minutes, stirring occasionally, until the tomatoes begin to soften.

Prepare the Salmon
Nestle the salmon fillets into the tomato and olive mixture, skin-side down. Pour the white wine over the salmon, allowing it to seep into the mixture.

Finish with Fresh Herbs
Once done, remove from the oven and sprinkle with freshly chopped parsley before serving.
