Preparation of Swordfish

Season the Fish
Pat the swordfish steaks dry with paper towels. Season both sides with salt and black pepper.

Sear the Fish
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the swordfish steaks and sear for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
Preparation of Sauce

Sauté Aromatics
In the same skillet, add the remaining tablespoon of olive oil. Reduce the heat to medium and add the finely chopped shallots and minced garlic. Sauté until translucent and fragrant, about 2-3 minutes.

Add Prosecco
Pour in the prosecco and bring to a simmer. Cook for about 5 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.

Add Fresh Herbs
Stir in the chopped parsley and basil, mixing well. Let the sauce cook for another 2 minutes to incorporate the flavors.

Combine Fish and Sauce
Return the seared swordfish to the skillet, spooning the sauce over the fish. Cook together for an additional 2 minutes to warm the fish through.

Plate the Dish
Serve the swordfish steaks on plates, drizzled with the prosecco sauce and garnished with additional fresh herbs if desired.
