Cooking Pasta

    Boil the Pasta

    Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Preparing the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add the diced pancetta. Cook until crispy, about 5-7 minutes, stirring occasionally.

    Add Garlic

    Add the minced garlic to the skillet with the pancetta and sauté for 1-2 minutes until fragrant.

    Deglaze with Wine

    Pour in the white wine, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 3-4 minutes until slightly reduced.

    Add Artichokes

    Stir in the chopped artichoke hearts, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld.

Combining Ingredients

    Combine Pasta and Sauce

    Add the cooked penne to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches desired consistency.

    Serve hot, topped with grated dried ricotta cheese.
