Soak the Beans
Rinse the dried cannellini beans under cold water, then soak them in a bowl of water overnight or for at least 8 hours to soften.

Cook the Beans
Drain the soaked beans and place them in a large pot with 4 cups of vegetable broth. Bring to a boil, then reduce heat and let simmer for about 1 hour or until the beans are tender.

Sauté Vegetables
In another pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables soften.

Add Garlic and Tomato Paste
Add the minced garlic and tomato paste to the sautéed vegetables. Cook for an additional 2-3 minutes, stirring frequently.

Combine Ingredients
Once the beans are cooked, add them along with the broth to the sautéed vegetables. Stir in the bay leaves, salt, and black pepper.

Cook the Pasta
Bring the mixture to a gentle boil and add 1 cup of ditalini pasta. Cook according to package instructions, usually about 8-10 minutes, until the pasta is tender.

Finish and Serve
Remove the bay leaves from the pot. Stir in the chopped fresh parsley. Taste and adjust seasoning if necessary. Serve hot.
