Preparation

    Prepare the Ingredients

    Wash the broccoli rabe under cold water, trim the ends, and chop into 2-inch pieces. Rinse the broccoli florets and set aside. Halve the cherry tomatoes. Mince the garlic cloves.

    Cook the Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Remove the casing from the sweet Italian sausage and crumble it into the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Cook the Pasta

    In a large pot of salted boiling water, cook the orecchiette pasta according to package instructions until al dente, usually about 9-11 minutes. Reserve 1 cup of pasta water, then drain the pasta.

    Sauté the Vegetables

    In the same skillet used for the sausage, add the remaining 2 tablespoons of olive oil. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the chopped broccoli rabe and broccoli florets, and sauté for about 4-5 minutes until tender.

    Combine Ingredients

    Add the halved cherry tomatoes to the skillet and return the cooked sausage. Stir to combine and cook for an additional 2-3 minutes. If the mixture seems dry, add reserved pasta water, a little at a time, to achieve desired consistency.

Serving

    Serve the Dish

    Toss the cooked orecchiette into the skillet with the sausage and vegetables. Mix well to combine. Season with salt and black pepper to taste. Serve immediately, garnished with additional red pepper flakes if desired.
