    Prepare the Fava Beans

    Start by shelling the fava beans. If they are fresh, they will have a pod that needs to be removed. Once shelled, blanch them in boiling salted water for about 2 minutes, then transfer them to an ice bath to stop the cooking process. Once cooled, peel the outer skin off the beans.

    Prepare the Garlic

    Peel and finely chop the garlic cloves.

    Prepare the Fish

    Rinse the sea bream fillets under cold water and pat them dry with a paper towel. Season both sides with salt and black pepper to taste.

    Sauté the Fish

    In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, add the seasoned sea bream fillets. Cook for about 3-4 minutes on one side until golden brown, then carefully flip them and cook for another 3-4 minutes until cooked through and flaky. Remove the fillets from the skillet and set aside.

    Sauté the Fava Beans

    In the same skillet, add the chopped garlic and sauté for about 30 seconds until fragrant. Then add the blanched fava beans and sauté for an additional 2-3 minutes until heated through. Season with salt and black pepper.

    Finish the Dish

    Return the sea bream fillets to the skillet with the fava beans, squeezing the juice of one lemon over the top. Sprinkle with fresh parsley and let cook together for another minute to meld the flavors.

Serving

    Plate the sautéed sea bream alongside the fava beans. Garnish with additional parsley and lemon wedges if desired. Enjoy your Orata con Fava!
