For the Grilled Sea Bream

    Prepare the Fish

    Clean the sea bream and make a few diagonal slashes on each side for even cooking.

    Marinate

    In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Rub this mixture all over the fish, including inside the slashes. Let it marinate for at least 30 minutes.

    Preheat Grill

    Preheat your grill to medium-high heat.

    Grill the Fish

    Place the marinated fish on the grill. Cook for about 6-7 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

    Garnish

    Once cooked, remove from the grill and sprinkle with fresh parsley before serving.

For the Fennel Ragu

    Prepare the Vegetables

    Thinly slice the fennel bulb and shallots. Mince the garlic.

    Sauté Aromatics

    In a saucepan, heat olive oil over medium heat. Add the sliced fennel, shallots, and minced garlic. Sauté for about 5-6 minutes, or until softened.

    Deglaze with Wine

    Pour in the white wine and let it simmer for about 3-4 minutes, allowing the alcohol to evaporate.

    Add Broth

    Add the vegetable broth, salt, and black pepper. Bring to a gentle boil, then reduce heat and let it simmer for about 10-15 minutes until the fennel is tender.

    Finish the Ragu

    Stir in fresh dill and lemon juice just before serving.
