Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into it. Gradually mix the flour into the eggs using a fork until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead it for about 8-10 minutes until it is smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll each piece out into thin sheets, about 1/8 inch thick. Cut the sheets into wide strips (about 1 inch) to create the maltagliati.

Cook the Sausage
In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned and cooked through, about 5-7 minutes.

Incorporate Vegetables
Add the fava beans, sweet peas, and cherry tomatoes to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender. Season with salt and black pepper to taste.

Cook the Pasta
Bring a large pot of salted water to a boil. Add the maltagliati and cook for about 3-4 minutes until they float to the surface and are al dente.

Combine and Serve
Using a slotted spoon, transfer the cooked pasta directly into the skillet with the sauce. Toss everything together over low heat for about 1-2 minutes. Serve hot, topped with grated Parmesan cheese.
