Salad Preparation

    Prepare the Salad Base

    In a large mixing bowl, combine the arugula, long stem artichokes, and halved cherry tomatoes. Toss gently to mix the ingredients evenly.

    Prepare the Avocado

    Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into bite-sized pieces and add it to the salad mixture. Toss gently to combine.

Grilling the Shrimp

    Marinate the Shrimp

    In a bowl, combine the olive oil, minced garlic, lemon juice, salt, and black pepper. Add the shrimp to the marinade and stir to coat evenly. Let it marinate for about 15 minutes.

    Grill the Shrimp

    Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated shrimp in a single layer. Grill for 2-3 minutes on each side, or until the shrimp are pink and opaque.

Assembly

    Combine and Serve

    Once the shrimp are cooked, remove them from the grill and let them cool for a minute. Add the grilled shrimp on top of the salad mixture. Serve immediately, garnished with a wedge of lemon if desired.
