Doughnut Batter Preparation
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, nutmeg, and cinnamon until well combined.
Combine Wet Ingredients
In another bowl, mix the ricotta cheese, eggs, and vanilla extract until smooth.
Combine Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Frying the Doughnuts
Heat the Oil
In a deep saucepan or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).
Shape the Doughnuts
Using a spoon or a doughnut cutter, scoop out small portions of the batter and carefully drop them into the hot oil.
Fry the Doughnuts
Fry the doughnuts for about 2-3 minutes on each side or until golden brown. Remove them with a slotted spoon and drain on paper towels.

Using a piping bag or a small knife, carefully fill each doughnut with a mixture of caramel and chocolate sauce. Aim to fill them until they are plump.
