Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, semolina flour, and salt. Make a well in the center and crack the egg into it. Mix the egg into the flour using a fork.

    Knead the Dough

    Gradually add water as needed while mixing until the dough comes together. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Shape the Cavatelli

    After resting, divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut into 1-inch pieces. Using a fork, press down on each piece to form the cavatelli shape.

Truffle Cream Sauce Preparation

    Sauté Garlic

    In a medium saucepan over medium heat, add a drizzle of olive oil. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Cream

    Pour in the heavy cream and bring it to a gentle simmer. Allow to cook for about 5 minutes, stirring occasionally.

    Incorporate Truffle Oil and Cheese

    Stir in truffle oil and grated Parmesan cheese, mixing well until the cheese is melted and the sauce is creamy. Season with salt and black pepper to taste.

    Add Fresh Truffles

    Just before serving, fold in the shaved fresh truffles into the sauce for an extra burst of flavor.

Cooking and Serving

    Cook the Cavatelli

    Bring a large pot of salted water to a boil. Add the cavatelli and cook for about 3-4 minutes until they float to the top and are tender.

    Using a slotted spoon, transfer the cooked cavatelli directly into the saucepan with the truffle cream sauce. Toss gently to coat the pasta evenly.
