Preparing the Marinara Sauce

    Heat the Olive Oil

    In a medium saucepan, heat the olive oil over medium heat.

    Sauté the Garlic

    Add the minced garlic cloves to the pan and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, oregano, basil, salt, pepper, red pepper flakes, and sugar.

    Simmer the Sauce

    Bring the sauce to a gentle simmer and let it cook for 20-25 minutes, stirring occasionally.

Preparing the Calamari

    Prepare the Calamari

    Clean the calamari by removing the head, innards, and the transparent quill. Cut into rings about 1/2 inch thick.

    Mix the Coating

    In a bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

    Coat the Calamari

    Dredge the calamari rings in the flour mixture until well coated.

    Fry the Calamari

    Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
