Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water, remove the tentacles, and cut the bodies into rings.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Coat the Calamari
Dredge the calamari rings and tentacles in the flour mixture, ensuring they are well coated.

Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari to the hot oil in small batches. Fry for about 2-3 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes and Seasonings
Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, and red pepper flakes.

Simmer the Sauce
Bring the sauce to a simmer, reduce the heat to low, and let it cook for about 15-20 minutes, stirring occasionally.

Stir in the chopped fresh parsley just before serving.
