Method
For the Risotto
- 1
- 2
Add the Rice
Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
- 3
Add Broth Gradually
Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding more broth. Continue this process until the rice is creamy and cooked through, about 20-25 minutes.
- 4
Finish the Risotto
Stir in the grated Parmesan cheese, salt, and black pepper. Remove from heat and let cool completely.
For the Filling
- 5
Prepare the Filling
Once the risotto has cooled, take a small portion of it and flatten it in the palm of your hand. Place a cube of mozzarella in the center and mold the risotto around it to form a ball, ensuring the cheese is completely encased.
For Breading
- 6
Prepare the Breading Station
Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs.
- 7
Bread the Arancini
Roll each risotto ball in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure each ball is evenly covered.
- 8
Heat the Oil
In a deep pot, heat the oil over medium-high heat until it reaches 350°F (175°C).
- 9
Fry the Arancini
Fry the breaded risotto balls in batches until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
For Marinara Sauce
- 10
Cook the Sauce
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- 11
Combine Ingredients
Add the canned crushed tomatoes, basil, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally.
