Lobster Bisque

Prepare the Lobster
In a large pot, bring water to a boil. Add lobster tails and cook for about 5-7 minutes until they turn bright red. Remove from water, let cool, and extract the meat from the shells. Chop the lobster meat into bite-sized pieces and set aside.

Add Flavor
Mix in the tomato paste and cook for another 2 minutes, stirring constantly. Pour in the white wine and let it simmer for about 5 minutes, allowing the alcohol to evaporate.

Simmer the Bisque
Add the fish stock to the pot and bring to a boil. Reduce heat and let it simmer for 20-25 minutes.

Blend and Finish
Using an immersion blender, blend the bisque until smooth. Stir in the heavy cream and truffle oil, and season with salt and black pepper to taste. Add the reserved lobster meat and let it warm through for 5 minutes.
Sherry Crème Fraîche

Combine Ingredients
In a small bowl, whisk together the crème fraîche and sherry vinegar until smooth. Season with salt to taste.

Serve
Spoon the sherry crème fraîche over the lobster bisque just before serving, garnishing with additional lobster pieces if desired.
