Sauté Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, approximately 3-4 minutes. Remove from heat and let cool.

Caramelize Shallots
Finely slice the shallots. In the same skillet, add another tablespoon of olive oil and sauté the shallots over low heat until they turn golden brown and caramelized, about 10-15 minutes. Set aside.

Mix Filling
In a large mixing bowl, combine the cooked spinach, caramelized shallots, feta cheese, ricotta cheese, eggs, salt, black pepper, and nutmeg. Mix until well combined and set aside.
Phyllo Dough Preparation

Prepare Phyllo Sheets
Preheat the oven to 180°C (350°F). Melt the butter and set it aside. Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.

Add Filling
Place a portion of the filling along one edge of the layered phyllo dough. Fold the sides over the filling and roll it tightly to form a log. Repeat with the remaining filling and phyllo dough.
Baking

Bake Spanakopita
Place the rolled spanakopita on a baking sheet lined with parchment paper. Brush the tops with any remaining melted butter. Bake in the preheated oven for 25-30 minutes or until golden brown.
Caramelized Shallot Cream Preparation

Make Cream Sauce
In a saucepan, melt 1 tablespoon of butter over medium heat. Add finely sliced shallots and sauté until soft and caramelized, about 10 minutes.

Add Cream
Pour in the heavy cream, and season with salt and pepper. Simmer for 5-7 minutes until slightly thickened. Remove from heat.
