Method
Preparing the New York Strip Steak
Season the Steak
Pat the New York strip steaks dry with paper towels. Season both sides generously with salt and black pepper.
Sear the Steak
In a large skillet over medium-high heat, add olive oil. Once hot, add the steaks and sear for about 3-4 minutes on each side for medium-rare doneness. Adjust cooking time for desired doneness.
Rest the Steak
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

In a bowl, gently mix the lump crab meat and blanched asparagus. Set aside.
Heat Hollandaise Sauce

Spoon the crab and asparagus mixture over the steak, then drizzle warm hollandaise sauce over the top.
