Method

Preparing the New York Strip Steak

Season the Steak

Pat the New York strip steaks dry with paper towels. Season both sides generously with salt and black pepper.

In a large skillet over medium-high heat, add olive oil. Once hot, add the steaks and sear for about 3-4 minutes on each side for medium-rare doneness. Adjust cooking time for desired doneness.

Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Making the Roasted Red Pepper Weisenberger Grits

Cook the Grits

In a large pot, bring 4 cups of water to a boil. Slowly add the Weisenberger grits while stirring constantly. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally, until thickened.

Once the grits are cooked, stir in the diced roasted red pepper, butter, cheddar cheese, and salt. Mix until well combined and creamy.

Making the Compound Butter

In a bowl, mix the softened butter, chopped parsley, minced garlic, and lemon juice until well blended.

In a bowl, gently mix the lump crab meat and blanched asparagus. Set aside.

Plating
