Method
Marinated Olives

Prepare the Marinade
In a large bowl, combine the mixed olives, olive oil, minced garlic, rosemary, red pepper flakes, lemon zest, and black peppercorns. Mix well to ensure the olives are well coated with the marinade.

Marinate the Olives
Cover the bowl with plastic wrap and let the olives marinate in the refrigerator for at least 2 hours, preferably overnight for the best flavor infusion.
Feta

Prepare Feta
Once marinated, take the olives out of the refrigerator and gently fold in the crumbled feta cheese. Be careful not to crush the feta.
Gremolata

Make the Gremolata
In a small bowl, combine the finely chopped parsley, minced garlic, and lemon zest. Mix well and set aside.
Anchovy Butter

Toast the Sourdough
Slice the sourdough bread and toast it until golden brown. Spread a thin layer of the anchovy butter on each slice while it's still warm.
