Hoecake Batter

    Prepare the batter

    In a large bowl, combine cornmeal, flour, baking powder, and salt. In another bowl, whisk milk, egg, and melted butter together. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

    Cook the hoecakes

    Heat a skillet over medium heat and lightly grease it. Pour 1/4 cup of batter into the skillet for each hoecake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown. Keep warm.

Candied Jalapeño Braised Pork

    Prepare the pork

    In a large pot or Dutch oven, heat a little oil over medium-high heat. Season the pork shoulder with salt and pepper and sear on all sides until browned. Remove the pork and set aside.

    Braised the pork

    In the same pot, add chopped onion, garlic, and serrano peppers, sautéing until soft. Stir in the candied jalapeños, cumin, and chicken broth. Return the pork to the pot, cover, and let simmer on low heat for 3-4 hours until the pork is tender and shreddable.

Mango Salsa

    Prepare the salsa

    Dice the ripe mango and finely chop the red onion and cilantro. In a bowl, combine the mango, onion, cilantro, lime juice, and a pinch of salt. Mix well and set aside.

Pickled Red Onion

    Pickle the onion

    Thinly slice the red onion and place it in a jar. In a small saucepan, combine vinegar, sugar, and salt. Heat until the sugar dissolves. Pour the mixture over the onions. Let sit for at least 30 minutes or refrigerate overnight for best results.

    Assemble the hoecake

    To serve, place a hoecake on a plate, top with shredded braised pork, a spoonful of mango salsa, pickled red onion, and a sprinkle of cotija cheese and fresh cilantro.
