Method

Preparing the Salmon

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Salmon

    Pat the salmon fillets dry with paper towels and place them on a baking sheet lined with parchment paper.

    Season the Salmon

    Drizzle the olive oil over the salmon fillets. Mince the garlic and sprinkle it over the fillets. Squeeze the juice of half the lemon over the salmon, and season with salt and black pepper. Chop the fresh dill and sprinkle it on top.

    Add Lemon Slices

    Slice the remaining half of the lemon and place the slices on top of the salmon.

Cooking the Salmon

    Bake the Salmon

    Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork.

    Remove the salmon from the oven and let it rest for 5 minutes before serving.

    Prepare Asparagus

    While the salmon is baking, wash the asparagus and trim the ends. Toss with olive oil, salt, and pepper, and roast in the oven for the last 10 minutes of the salmon baking time.

    In a pot, bring 2 cups of water to a boil. Add the quinoa and reduce to a simmer. Cover and cook for 15 minutes or until all water is absorbed. Fluff with a fork before serving.
