    Soak the Bacalhau

    Place the dried cod in a large bowl, cover it with water, and let it soak for 24-48 hours, changing the water at least 3 times. This will help to remove excess salt.

    Prepare Vegetables

    Peel and slice the potatoes into thin rounds. Finely slice the onions and garlic. Chop the green bell pepper and tomatoes into small pieces. Set aside.

    Cook the Cod

    After soaking, drain the cod and place it in a pot. Cover it with fresh water, add bay leaves, and bring to a simmer over medium heat. Cook for about 10-15 minutes until the fish is tender. Remove and let it cool slightly.

    Layer the Ingredients

    In a large baking dish, layer half of the sliced potatoes at the bottom. Then add half of the sliced onions, garlic, green peppers, and tomatoes. Place the cooked cod on top, flake it into large pieces. Add the remaining vegetables on top of the cod, followed by the second layer of potatoes.

    Add Olive Oil and Season

    Drizzle the olive oil evenly over the top layer of potatoes. Season with salt and black pepper to taste. Squeeze the juice of the lemon over the dish and sprinkle with chopped parsley.

Baking

    Bake the Dish

    Preheat your oven to 180°C (350°F). Cover the baking dish with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes until the potatoes are golden brown.

    Garnish and Serve

    Once baked, remove from the oven, and let it cool for a few minutes. Garnish with black olives and additional parsley before serving.
