Preparation of Bacalhau

    Soak the Cod

    Place the salted cod in a large bowl and cover it with cold water. Soak for 24-48 hours, changing the water at least 3 times to remove excess salt.

    Prepare the Cod

    After soaking, drain the cod. Place it in a pot, cover with fresh water, and add bay leaves. Bring to a gentle simmer for about 15-20 minutes until the cod is cooked through. Remove the cod, let it cool, and flake it into large pieces.

Cooking the Dish

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add finely sliced onions and minced garlic. Sauté until the onions are translucent and fragrant, about 5-7 minutes.

    Add Potatoes and Cod

    Peel and slice the boiled potatoes into rounds. Add them to the skillet along with the flaked cod. If using, also add sliced red bell pepper at this stage. Gently toss everything together to combine.

    Incorporate Olives and Parsley

    Add the black olives and chopped parsley to the skillet, mixing gently to distribute evenly throughout the dish. Season with salt and pepper to taste.

    Cook for an additional 5-10 minutes on low heat to allow the flavors to meld together. Stir occasionally to avoid sticking.

    Transfer the Bacalhau à Vila Darei to a serving platter. Garnish with pimento slices and additional parsley, if desired. Serve warm.
