Preparation of Ingredients

    Soak the Cod

    Rinse the salted cod in cold water to remove excess salt. Then, soak it in a bowl of fresh water for 24-48 hours, changing the water several times.

    Prepare the Potatoes

    Peel and cut the potatoes into thin matchstick fries. Rinse them in cold water to remove excess starch and pat them dry with a kitchen towel.

    Chop the Vegetables

    Finely chop the onion and garlic cloves.

    Prepare the Parsley

    Chop the fresh parsley finely.

Cooking

    Fry the Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the potatoes and fry until golden and crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.

    Cook the Cod

    In the same skillet, add another 2 tablespoons of olive oil. Add the chopped onion and garlic, sautéing until translucent. Add the soaked and shredded cod, stirring to combine, and cook for another 5 minutes.

    Lower the heat and add the fried potatoes to the skillet with the cod mixture. Stir gently to combine.

    Add Eggs

    In a bowl, whisk the eggs with a pinch of salt and black pepper. Pour the eggs over the cod and potato mixture, stirring gently until the eggs are cooked through and the mixture is creamy, about 3-4 minutes.

    Garnish and Serve

    Remove from heat, stir in the chopped parsley and top with black olives. Serve immediately.
