Method

Preparation

1

Wash and Chop Collard Greens

Thoroughly wash the collard greens under cold water to remove any dirt or grit. Remove the tough stems and chop the leaves into bite-sized pieces.

2

Prepare Onion and Garlic

Peel and finely chop the onion. Peel the garlic cloves and either mince them or crush them with a garlic press.

Cooking

3

Sauté Onions and Garlic

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

4

Add Collard Greens

Add the chopped collard greens to the pot and stir until they begin to wilt, about 2-3 minutes.

5

Add Broth and Seasonings

Pour in the vegetable broth and add the red pepper flakes, apple cider vinegar, salt, and black pepper. Stir well to combine.

6

Simmer

Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, stirring occasionally, until the greens are tender.
