Pork Belly Preparation

Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern without cutting into the meat. Rub the pork belly with salt and black pepper on all sides.

Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the pork belly skin side down and sear for about 5-7 minutes until the skin is crispy. Flip the pork belly and sear the other side for another 5 minutes.

Add Aromatics
Add crushed garlic cloves, rosemary, and thyme to the skillet around the pork belly.

Roast the Pork Belly
Transfer the skillet to the preheated oven and roast for about 2 hours, or until the pork is tender and the skin is crispy. Check occasionally and add a little water if it begins to dry out.

Blend the Sauce
Remove from heat and blend the mixture using an immersion blender or transfer to a blender. Blend until smooth or your desired consistency.
