Preparing the Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Slice them into thin strips to create fries.

    Soak the Potatoes

    Soak the sliced potatoes in cold water for at least 30 minutes to remove excess starch.

    Preheat the Oil

    In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and pat dry the soaked potatoes. Carefully add them to the hot oil in batches and fry until golden brown and crispy, about 5-7 minutes.

    Season the Fries

    Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt, garlic powder, paprika, and black pepper.

Preparing the Crab Topping

    Cook the Crab

    In a skillet, melt butter over medium heat. Add the unshelled blue crab and sprinkle with Old Bay seasoning. Cook for about 5-7 minutes until the crab is heated through and fragrant.

    Add Lemon Juice

    Drizzle lemon juice over the cooked crab and mix well to combine flavors.

Assembling the Dish

    Plate the Fries

    Place a generous portion of seasoned fries on a serving plate.

    Carefully spoon the seasoned crab mixture over the fries.

    Garnish

    Sprinkle chopped parsley over the top and serve with a side of your signature sauce for dipping.
