Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Whisk well to combine.

Prepare the Wet Mixture
In another bowl, whisk together the egg and buttermilk until fully combined.

Coat the Calamari
Dip each calamari ring first into the wet mixture, allowing excess to drip off, then dredge in the dry mixture until fully coated.

Heat the Oil
In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari in batches for 2-3 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.

Sauté the Garlic
In a medium saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté for about 1 minute until fragrant.

Add the Tomatoes and Seasonings
Stir in the crushed tomatoes, red pepper flakes, oregano, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.

Finish with Fresh Basil
Remove from heat and stir in fresh basil. Adjust seasoning if necessary.
