Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour. Set aside.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, combine the unsalted butter and bittersweet chocolate. Stir continuously until melted and smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly thickened.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from cooking. Add vanilla extract, flour, and a pinch of salt, and mix until just combined.

Baking

  1. 5

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.

  2. 6

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 7

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges to loosen the cakes.

Serving

  1. 8

    Invert and Serve

Place a plate on top of each ramekin and carefully invert to release the cake. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
