Crust Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated with butter.

Press Crust into Pan
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake Crust
Bake in the preheated oven for 10 minutes. Remove from the oven and let cool while you prepare the filling.

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined.

Add Vanilla and Eggs
Add the vanilla extract and eggs, one at a time, mixing well after each addition until the mixture is smooth.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the center is set and slightly jiggles when moved.

Turn off the oven and leave the cheesecake inside for 1 hour. Then remove from the oven and let cool completely at room temperature.

Once cooled, cover and refrigerate for at least 4 hours or overnight for best results.

In a small bowl, combine the fresh fruit, granulated sugar, and lemon juice. Toss gently to coat the fruit.
