For the Calamari

Method

For the Calamari

  1. 1

    Prepare the Squid

In a bowl, combine the cleaned squid rings with buttermilk. Let them soak for about 30 minutes.

  2. 2

    Prepare the Coating

In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

  3. 3

    Heat the Oil

In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

  4. 4

    Coat the Squid

Remove the squid from the buttermilk and let the excess drip off. Dredge them in the flour mixture until well coated.

  5. 5

    Fry the Squid

Carefully drop the coated squid rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

For the Marinara Sauce

  1. 6

    Cook the Marinara Sauce

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 7

    Add Tomatoes and Spices

Add the crushed tomatoes, oregano, basil, salt, black pepper, and red pepper flakes to the saucepan. Stir well.

  3. 8

    Simmer the Sauce

Reduce heat to low and simmer the sauce for about 15-20 minutes, stirring occasionally.

  4. 9

    Garnish

Once the sauce is done, remove from heat and stir in the chopped parsley.
