Tequila Production

Harvesting Agave
Harvest the Blue Weber Agave plants, ideally aged between 7 to 10 years, by cutting the leaves away to reveal the piña.

Cooking the Piña
Bake the piñas in an oven or autoclave at high temperatures for 24 to 48 hours to convert the starches into fermentable sugars.

Mashing
Once cooked, crush the piñas to extract the sweet juice known as aguamiel.

Fermentation
Transfer the aguamiel to fermentation tanks and add yeast to convert the sugars into alcohol over a period of 5 to 10 days.

Distillation
Distill the fermented liquid twice in copper stills to achieve purity and desired alcohol content.

Bottling
Bottle the distilled tequila without aging, ensuring it retains its clear, unaged character.
