Directions

  1. 1

    Prepare the Tater Tots

Preheat your oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer and bake according to package instructions until golden brown and crispy, about 20-25 minutes.

  2. 2

    Cook the Protein

While the tater tots are baking, cook your choice of protein (ham, bacon, or sausage) in a skillet over medium heat until fully cooked and crispy. Remove from heat and chop into bite-size pieces.

  3. 3

    Fry the Eggs

In the same skillet, crack the eggs and fry them to your desired doneness. Season with salt and pepper.

  4. 4

    Assemble the Totchos

Once the tater tots are done, remove them from the oven and place them on a large serving platter. Top with the cooked protein, drizzle with white queso, and place the fried eggs on top.

  5. 5

    Add Toppings

Finish by adding dollops of sour cream, spoonfuls of salsa, and a sprinkle of chopped chives. Serve immediately.
