Method
Crust Preparation
Make the Crust
In a medium bowl, combine graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch pie pan to form an even crust.
Chocolate Ganache Preparation
Prepare the Ganache
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chocolate chips. Let sit for 2 minutes, then stir until smooth. Pour the ganache over the prepared crust and spread evenly. Refrigerate for at least 30 minutes to set.
Fudge Sauce Preparation
Make the Fudge Sauce
In a saucepan, combine granulated sugar, cocoa powder, butter, and milk. Cook over medium heat, stirring constantly until the mixture comes to a boil. Let boil for 1 minute without stirring. Remove from heat and stir in vanilla extract. Allow to cool slightly.
Assembly
Assemble the Pie
Once the ganache has set, layer the coffee ice cream on top of the ganache, spreading evenly. Drizzle the fudge sauce over the ice cream. Return the pie to the freezer for at least 2 hours before serving.
