Method
Fish Preparation
Prepare the Cod
Season the Alaskan cod fillets with salt and pepper. Dredge each fillet in flour, dip into the beaten egg, then coat with panko breadcrumbs.
Fry the Cod
Heat oil in a deep skillet over medium-high heat. Fry the breaded cod for about 4-5 minutes on each side or until golden and cooked through. Remove and drain on paper towels.
Coleslaw Preparation
Mix the Coleslaw
In a large bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and refrigerate until serving.
Hushpuppies Preparation
Fry Hushpuppies
Heat oil in a deep skillet over medium-high heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes. Drain on paper towels.
Parmesan Fries Preparation
Prepare the Fries
Preheat the oven to 425°F (220°C). Cut the russet potatoes into fries and toss them with olive oil, salt, and pepper. Spread on a baking sheet.
Bake the Fries
Bake for about 30-35 minutes, flipping halfway through, until crispy. Remove from the oven and sprinkle with grated Parmesan cheese.
