Lobster Bisque Preparation

    Sauté Vegetables

    In a large pot, heat olive oil and 2 tablespoons of butter over medium heat. Add chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Garlic and Tomato Paste

    Add minced garlic and tomato paste to the pot. Stir and cook for another 2 minutes until fragrant.

    Deglaze with Sherry

    Pour in the sherry and scrape the bottom of the pot to release any browned bits. Allow it to simmer for 3-4 minutes.

    Add Stock and Seasonings

    Add the fish stock, bay leaf, thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.

    Blend and Add Cream

    Remove the bay leaf. Use an immersion blender to puree the soup until smooth. Stir in the heavy cream and the remaining 2 tablespoons of butter. Add the lobster meat and heat gently for another 5 minutes.

Brioche Croutons Preparation

    Prepare Croutons

    Preheat the oven to 375°F (190°C). In a mixing bowl, toss brioche cubes with olive oil and salt until well coated.

    Bake Croutons

    Spread the brioche cubes on a baking sheet in a single layer. Bake for 10-12 minutes until golden brown and crispy, stirring halfway through.
