Sauté Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and sauté until they are caramelized and golden brown, about 25-30 minutes. Stir occasionally to prevent burning.

Deglaze with Brandy

Once the onions are caramelized, carefully add the brandy to the pot. Allow it to simmer for about 5 minutes, scraping up any brown bits from the bottom.

Add Broth and Seasonings

Pour in the beef broth and add the thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.

Prepare Croutons

While the soup simmers, preheat the oven to 375°F (190°C). Toss the ciabatta cubes with a bit of olive oil, salt, and pepper, then spread them on a baking sheet. Bake for 10-15 minutes, or until golden brown and crispy.

Serve Soup

Ladle the hot soup into bowls, top with a generous handful of grated Gruyere cheese, and add the ciabatta croutons on top. If desired, place under a broiler for a few minutes to melt the cheese slightly, but watch closely.
