Method
Shrimp Preparation
Coat the Shrimp
Dredge each shrimp first in flour, then dip in egg, and finally coat with coconut flakes. Ensure each shrimp is well coated.
Fry the Shrimp
Heat oil in a deep pan over medium heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

In a small bowl, combine horseradish, apricot preserves, chopped mint, and basil. Mix well and set aside.
Coleslaw Preparation
Prepare the Coleslaw
In a large bowl, combine shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine.
Assembly
Serve the Dish
Plate the fried coconut shrimp alongside a small bowl of dipping sauce, a serving of coleslaw, and diced pineapple for garnish.
