Preparing Sushi Rice

Cook the Rice

Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once rice is cooked, transfer to a bowl and gently fold in the vinegar mixture. Let cool.

Slice Fish and Prepare Ingredients

Slice the ahi tuna and salmon into bite-sized pieces. Prepare avocado, edamame, sliced scallions, and fresno chilis.

Build the Bowl

In a bowl, layer the sushi rice as the base. Top with sliced ahi tuna, salmon, avocado, edamame, scallions, and fresno chilis. Add sesame-seaweed salad on the side.

Add Sauces

Drizzle wasabi aioli over the poke bowl and add a scoop of papaya-mango salsa on top.
