    Peel the onions and slice them into thick rings, about 1/2 inch wide. Separate the rings carefully and set aside.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the craft beer until the batter is smooth and has a thick consistency.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter and Fry the Onion Rings

    Dip each onion ring into the batter, allowing excess to drip off. Carefully place the battered onion rings in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve the colossal onion rings hot with sriracha mayo on the side for dipping.
