Serrano Avocado Spread

Make spread
Halve and pit the half avocado; scoop flesh into a small bowl. Finely mince the serrano chile (remove seeds if you want milder heat) and add to the avocado. Add lime juice, mayo, salt, and pepper. Mash with a fork until mostly smooth with a few small chunks for texture. Taste and adjust salt or lime as desired. Set aside at room temperature.
Tempeh

Prepare and marinate
Thinly slice the tempeh to about 1/4 in (6 mm). In a small bowl combine maple syrup and soy sauce. Toss the tempeh slices in the mixture and let sit 5 minutes to absorb flavor.

Pan-fry tempeh
Heat a nonstick or stainless skillet over medium heat and add 1/2 tsp neutral oil. When shimmering, add the marinated tempeh in a single layer. Cook 2.5–3 minutes per side until golden brown and caramelized; spoon any remaining marinade into the pan toward the end so it reduces slightly and glazes the tempeh. Transfer to a plate and keep warm.

Cook egg
In the same skillet (wipe out if excess glaze), add remaining 1/2 tsp oil and reduce heat to medium-low. Crack the cage-free egg into the pan. For a typical Mc-style sandwich, cook sunny-side-up until the white is set but yolk remains slightly runny, about 2–3 minutes; cover the skillet for 30–45 seconds to set the top of the white if needed. Season with 1/8 tsp salt and a pinch of black pepper. Alternatively, cook over-easy if you prefer the yolk more set.
English Muffin & Assembly

Toast muffin
Split the English muffin and toast until golden. Optionally spread the cut sides lightly with 1/2 tsp butter while hot.

Assemble sandwich
Spread the serrano avocado mixture evenly on the bottom half of the toasted muffin. Layer the warm maple-glazed tempeh slices over the spread. Add the cheddar slice on top of the tempeh so it softens slightly from the heat. Place the cooked egg on the cheese, then top with fresh spinach leaves (they will wilt slightly from residual heat). Close with the muffin top. Press gently, cut in half if desired, and serve immediately.

Serving suggestion
Serve hot. Optionally accompany with extra lime wedges or a small side of mixed greens. The sandwich yields a balance of sweet (maple), savory (tempeh, cheddar), creamy-spicy (serrano avocado spread), and bright greens.
