Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized.

If using store-bought pickled corn and peppers, ensure they are well-drained. If making your own, prepare them a day in advance.
Making the Whipped Carrot Feta

Blending the Mixture
In a food processor, combine the boiled carrots, roasted garlic (squeezed from the head), and feta cheese. Blend until smooth and creamy.

Incorporating Pickled Ingredients
Add in the pickled corn and pickled peppers to the mixture and pulse a few times to combine, leaving some texture.

Add the lemon ash and blend again briefly. Taste and adjust seasoning as desired.
