Prepare Tempeh Chorizo

    Cook Tempeh

    In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Crumble the buffalo tempeh into the skillet and cook for about 5 minutes, stirring occasionally.

    Season Tempeh

    Add smoked paprika, cumin, garlic powder, salt, and black pepper to the skillet. Stir well to combine and continue cooking for another 5-7 minutes until the tempeh is heated through and slightly crispy.

Prepare Eggs

    Fry Eggs

    In a separate non-stick skillet, heat a small amount of oil over medium heat. Crack the cage-free eggs into the skillet and fry them to your desired doneness (sunny-side up or over-easy). This should take about 2-4 minutes.

Assemble the Dish

    Prepare Tortillas

    Warm the corn tortillas in a dry skillet for 30 seconds on each side or until pliable.

    Assemble

    On each tortilla, place a generous scoop of the tempeh chorizo, top with a fried egg, and add slices of avocado. Serve warm.
