Method

Preparation

  1. 1

    Prepare the Maple Tempeh

Slice the tempeh into thin strips and heat a non-stick skillet over medium heat. Add a splash of oil and cook the tempeh for about 5 minutes, turning occasionally, until golden brown. Add maple syrup to the skillet and cook for an additional 2-3 minutes until the tempeh is caramelized. Remove from heat and set aside.

  2. 2

    Cook the Egg

In the same skillet, crack the cage-free egg and cook it sunny-side up or to your preferred doneness. Season with salt and pepper to taste. Once cooked, set aside.

  3. 3

    Toast the English Muffin

Split the English muffin in half and toast it until golden brown. You can use a toaster or grill it on the skillet for extra flavor.

  4. 4

    Prepare the Spinach

Wash the spinach leaves thoroughly and pat them dry. If desired, sauté in the skillet for about 1-2 minutes just until wilted, or leave them fresh.

  5. 5

    Assemble the McSILO

Spread the serrano avocado spread on the toasted sides of the English muffin. Layer the caramelized maple tempeh, spinach, and the cooked egg on one half of the muffin. Top with grated cheddar cheese, then close the sandwich with the other half of the muffin.
